ABOUT THE ROLE: The Restaurant Sushi Chef at Nobu will assists the Nobu Executive Chef with the day to day operations of the department and ensure overall quality of products produced.

  • Assumes responsibilities in the absence of the Executive Chef.
  • Prepares recipes and food items in accordance with the Executive/Head Chef requirements and the Nobu standards. 
  • Prepares recipes, hot, cold and dessert food items in accordance with standard operating procedures including sushi preparations. 
  • Ensures proper preparation, service, production, and storage of food items. 
  • Prepares sauces, sautés, tempura, wood oven, teppanyaki, grill, desserts, and sushi food items in accordance with restaurant needs.
  • Performs preliminary prep hot and cold food work in a timely manner.
  • Puts food deliveries away once delivered, including dry storage, chilled items accordingly and rotate food products to ensure FIFO and freshness.
  • Ensures ingredient supply levels are accurate.
  • Observes safety rules and regulations.
  • Maintains extraordinary menu knowledge and attention to detail with plate presentation.
  • Maintains a clean and organized workstation and kitchen area at all times. 
  • Handles knives professionally to slice, dice, chop, and prepare food.
  • Prepares rice, measure and execute recipes.
  • Creates Omakase menu, Omakase dessert menu, and daily specials.
  • Hands-on approach (when required) to satisfy the expectation of guests and associates.
  • Assists Executive Chef, Chef Assistants, Cooks, as needed in execution of service.
  • Displays professionalism by conducting oneself with responsibility, integrity, accountability, and excellence.
  • Assists with all aspects of daily BOH operations including but not limited to; managing staff schedules and station assignments, ordering and receiving product, preparing prep lists and instruction for the team, quality checking product during all stages of preparation, general oversight of production and service, conducting regular internal health and safety inspections, managing daily food cost and spend.
  • Ensures quality food product and presentations.
  • Ensures food is handled in a respectful manner and is processed and stored in accordance with Department of Health regulation.
  • Adheres to and enforce company policies and statutory requirements with regards to health and safety, sanitation, and fire procedures
  • Ensures safe and proper use of equipment.
  • Ensures kitchen equipment is in good working order, address any equipment issues promptly.
  • Maintains a high standard of cleanliness and sanitation in and around all culinary work areas.
  • Holds team members accountable on a fair and consistent basis.
  • Supports and fosters a caring work environment.
  • Works with General Manager and front of house staff to ensure a positive guest experience.
  • Maintains food cost, labor cost, supply cost, and other controllable expenses within budget guidelines.
  • Minimizes waste and spoilage by monitoring occupancy forecasts.
  • Maintains high standards of appearance and good personal hygiene.
  • Be willing to undertake additional duties and responsibilities of work outside the normal daily/weekly routine but within the overall scope of the position.
  • Additional duties as requested by the Executive Chef.

OUR IDEAL CANDIDATE: The ideal candidate for the Restaurant Sushi Chef will have extensive experience as Head Sushi Chef at a fast-paced, high volume, 5-star reputable free-standing restaurant and has a passionate approach to streamline operational procedures and increase productivity of department.

  • College degree, culinary school/apprenticeship or equivalent work experience preferred. 
  • Minimum of 5 years of Head Sushi Chef experience preferred.
  • Must have experience operating in a similar role for minimum of 3 – 5 years.
  • Experience and proven track record within the 5-star framework of deluxe hotels or reputable free-standing restaurants.
  • Strong leadership, communication and management skills.
  • Ability to work in a diverse, fast-paced environment with heavy business volumes while managing sensitive situations relating to staff and guests, in a timely manner.
  • Knowledge, understanding, and compliance of policies and procedures, job descriptions, daily memorandums, statutory requirements regarding health and safety, sanitation, proper chemical usage, fire procedures, and HACCP.
  • Knowledge of all kitchen equipment operations.
  • Ability to read, write, and understand English.
  • Ability to perform basic/intermediate math skills.

  • Knowledge, understanding, and compliance of policies and procedures, job descriptions, daily memorandums, chemical labels, and other instructions.     
  • Requires mobility.
  • Ability to grasp, lift, move, or push goods on cart/truck weighing a maximum of 100 pounds.
  • Ability to work in confined spaces.
  • Sense of smell, taste, touch, and sound.
  • Eye/hand coordination and manual dexterity.
  • Ability to distinguish letters, symbols, and colors.
  • Normal vision and hearing range.
  • Requires mobility.
