THE IMPACT OF THIS ROLE
Rosewood Baha Mar’s Food & Beverage Manager will work together with the Director of Food & Beverage to manage the overall operational and financial responsibility for a full range restaurant, including labour and cost control, staffing, scheduling, training, and revenue enhancement. This individual will always employ an efficient and professional manner to exceed guests’ expectations for their hotel restaurant experiences.
KEY RESPONSIBILITIES
Responsibilities will include, but are not limited to:
• Provide dynamic services to ensure guests are “wowed” by Rosewood Baha Mar’s hospitality
• Maintain complete knowledge of:
o All liquor brands, beers, and non-alcoholic selections available in restaurant.
o The particular characteristics and description of every wine/champagne by the glass and major wines on the wine list.
o Designated glassware and garnishes for drinks.
o All menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation, and prices.
o Daily menu specials
o Dining room layout, table/seat/station numbers, proper table set-ups, room capacity, hours of operation, price range and dress code.
o P.O.S. and manual system procedures.
o Daily house count, arrivals/departures, V.I.P.’s.
o Scheduled in-house group activities, locations, and times.
o Correct maintenance and use of equipment.
o All department policies/service procedures.
• Direct smooth, efficient, cost-effective operation, including labor management, supervision of all aspects of services, scheduling and inventory control
• Monitor all daily sales, ordering, par levels and costs for outlet
• Direct and organize the activities of the restaurant/outlet
• Maintain the highest standards of food and beverage quality, service, and marketing to maximize profits through “outstanding” customer service
• Uphold company’s key values and brand standards to encourage employees to maintain culture of excellence and achieve top results
• Monitor and follow-up on employee training to ensure Baha Mar standards of service are understood
• Proactively manage and support all service tactics always adhering to company policies
• Build positive working relationships through teamwork and clear communication
• Strive for continuous improvement while delivering high levels of professionalism
• Ensure that all safety, sanitation, energy management, preventative maintenance and other standards are consistently met
• Immediately report any security, maintenance, housekeeping issues to management
• Oversee all aspects of restaurant service on a regular basis to ensure consistency of excellent service standards
• Develop new techniques of service for maximum guest satisfaction at minimum operating costs
• Total compliance with Rosewood Baha Mar’s standards of operation
• Stay current on hospitality best practices and industry trends
• Perform other duties as assigned
• Strategize Marketing Plan for the Department.
• All other duties as assigned
