ABOUT THE ROLE: The Pastry Chef at Nobu is responsible for all the facets of pastry offerings to include but not limited to, preparing quality pastry items such as desserts, breads, ice creams, sorbets, creams, sake infused drinks, petite fours, and syrups. The Pastry Chef provides complete production and plating service. Additional responsibilities include ordering, scheduling, and maintaining food costs with the communication and direction of the Executive Chef.

  • Checks the daily dessert menus, assigning workloads accordingly and writing requisitions for food portions to fill the needs of the assigned outlet.
  • Supervises and coordinates all activities in preparation of desserts, pastries, cakes etc.
  • Manages and coordinates preparatory work for all Pastry offerings.
  • Oversees food budgeting and optimizes food costs, maintains recipe standards, manages kitchen pantry and stock levels, develops relationships with purveyors, and orders supplies as needed in the restaurant.
  • Decorate pastries and cakes with precision and attention to detail.
  • Ensures all deserts, cakes and pastry arrangements are palatable and delicious.
  • Constantly coordinates with culinary staff to create the most efficient dishes.
  • Presents exemplary artistic culinary techniques with food presentation.
  • Utilizes all by-products in the kitchen by making them into special dishes to conserve food costs.
  • Maintains a safe, clean, and sanitary work environment.
  • Abides by city and state health department codes.
  • Coaches, trains and develops the Pastry support team.

OUR IDEAL CANDIDATE: The ideal candidate for the Pastry Chef will have at least three years of experience as a Pastry Chef and has a passionate for craft and creativity.

  • Some culinary classes preferred. 
  • 3+ years’ experience as a Pastry Chef.   
  • Creative with precision and attention to detail.
  • Strong organizational and supervisory skills.
  • Must be familiar with pastry classifications and preparations.
  • Excellent team leadership skills
  • Ability to coordinate multiple tasks simultaneously.
  • Experienced skills in pastry and dessert production including large-scale production of other menu items.
  • Excellent time management skills to ensure timely production of pastries.
  • Ability to work in a diverse, fast-paced environment with heavy business volumes while managing sensitive situations relating to staff and guests, in a timely manner.
  • Knowledge, understanding, and compliance of policies and procedures, job descriptions, daily memorandums, statutory requirements regarding health and safety, sanitation, proper chemical usage, fire procedures, and HACCP.
  • Knowledge of all kitchen equipment operations.
  • Ability to read, write, and understand English.

  • Knowledge of all kitchen equipment operations. 
  • Ability to establish and maintain an effective working relationship with management, staff, and guests.
  • Knowledge, understanding, and compliance of policies and procedures, job descriptions, daily memorandums, chemical labels, and other instructions.     
  • Requires mobility.
  • Ability to grasp, lift, move, or push goods on cart/truck weighing a maximum of 100 pounds.
  • Ability to work in confined spaces.
  • Sense of smell, taste, touch, and sound.
  • Eye/hand coordination and manual dexterity.
  • Ability to distinguish letters, symbols, and colors.
  • Normal vision and hearing range.
  • Requires mobility.
