This is an exciting new opportunity within Rosewood Hotels in New Zealand. This position will oversee the Culinary program of our three luxury properties – Rosewood Cape Kidnappers, Rosewood Kauri Cliffs and Rosewood Matakauri.

About the Role:

A rare opportunity has become available to drive our dynamic culinary operation across all three properties. Reporting to the Managing Director, you will have a pivotal role in maximizing employee productivity, ensuring profitable operations, delivering on our brand promise and upholding the highest standards in safety and cleanliness. This is a hands-on position. 


Key Responsibilities:

  • Delivers the brand promise and provide exceptional culinary experiences
  • Leads and mentors the Kitchen teams and create a collaborative culture based on mutual respect and trust
  • Reviews, implements and maintains operational standards; maximising efficiency and delivery of the highest standards of service
  • Seeks to improve productivity; strategically plans resourcing and offerings with all considerations (financial and guest experience) in mind
  • Procures local, fresh products for menus which offer the guests seasonal variety
  • Is responsible for financial management including budgeting, ordering and stock takes with accuracy and efficiency
  • Reviews menus, analyses recipes, determines food, labour, overhead costs and assigns prices to menu items. Directs food apportionment policy to control costs.
  • Supervises cooking and other kitchen personnel and coordinates their assignments to ensure economical and timely food production.
  • Liaises with the other departments in the hotels on a daily basis to ensure smooth operations
  • Coaches Senior Chefs in the performance of their duties in accordance with policies and procedures.
  • Focuses on the Associate dining experience
  • Demonstrates and reinforces Rosewood Hotels & Resorts’ Values and Culture Characteristics.

About You:

The Director of Culinary will be a seasoned professional who is responsible for ensuring the utmost satisfaction for our guests at our 3 properties. The successful candidate will have: 

  • Previous, relevant experience as an Executive Chef within a 5-star or luxury hotel environment
  • Proven record of managing, training, motivating and developing a team
  • A creative approach to the production of high quality food
  • A strategic and business focused approach 
  • Excellent communication skills
  • Ability to build effective relationships, internal and external
  • Excellent planning and organizational skills
  • A visible passion for service delivery and hospitality
  • Relevant culinary and management qualifications
  • A commitment to high standards and food quality
  • Ability to drive and inspire teams; both immediate and remotely 
  • Administrative management experience and sound financial acumen
  • Committed to the highest standards of food hygiene and workplace health & safety
  • A high degree of professionalism
