About the role

Four Seasons Resort Scottsdale is in search of a talented Food & Beverage Cost Controller. This position is critical to the success of our business from a financial perspective, guest and employee experience. This position will work with every department on property as well as with our guests/customers throughout their journey with us. The primary responsibility of this role will provide support for Director of F&B and analyze information that will assist to improve the financial and customer service in the F&B division. This will require the knowledge and skills to work in multiple technology platforms and with the hotel operations team. This role keeps efficiency and productivity as well as nurturing the planning process for the F&B division.

What you will do

The following is example of functions and tasks performed in this role with the expressed understanding that the responsibilities are not limited to this list and can change with the needs of the department and overall hotel operation: 

  • Conduct competitive set analyses for catering and F&B  outlets, including pricing analyses and hypothesize suggestions on future pricing / menu engineering  
  • Discover maximizing revenue strategies using Avero Software
  • Finding food cost efficiencies through food waste system
  • Attend beverage and food cost meeting to create reductions
  • Assist to analyze guest satisfaction scores through various technology platforms to ensure scores are shared with teams and guests are addressed
  • Weekly/ Monthly F&B score card, Avero reporting and other financial reports
  • Menu Engineering per outlet with culinary support with suggestions including addition of Menu psychology
  • Menu Recipe implementation and management in Birchstreet
  • Complete monthly food and beverage Profit and Loss worksheets by department
  • Attend and participate in required meetings
  • Run upsell reports and server selling reports
  • Monitor and record all house account meals and entertainment expenses (80-20 rule) and report any non-compliance to the Assistant Director of Finance for follow-up with the hotel management
  • Constantly monitor all food and beverage controls to ensure compliance with Four Season Hotels Ltd. policies and procedures
  • Maintain a close working relationship with the Food & Beverage Director, Executive Chef and Director of Purchasing and make them aware of any potential problems or opportunities to improve the controls in their areas as they relate to food and beverage
  • Attend Food & Beverage Meeting to review prior month's Food & Beverage report to highlight actions needed, and focus Food & Beverage management on appropriate opportunities
  • Any other F&B reporting as needed from Director of F&B, Director of Finance and Director of Catering
  • Other duties as assigned

What you bring

  • Previous hotel/sales and events/restaurant support 
  • Previous finance or accounting experience
  • Previous phone experience and advanced phone etiquette skills   
  • Ability to communicate well in English through verbal and written skills 
  • Well organized, able to prioritize and multi-task in a busy environment 
  • Proficient computer skills and knowledge in Microsoft Office products, Opera, Salesforce, (or other CSM platform) and other programs as needed 
  • Adaptable and able to learn new skills and tasks efficiently, and function as a team player 
  • History of working in a team environment and developing working relationships 
  • Schedule flexibility to accommodate to business needs 
  • Strong understanding of confidentiality and ability to ensure date integrity.
